The Dogs Bollocks.
This is my version of a Bees Knees.
I love classic cocktails, especially something not too sweet and this slightly elevated cocktail hits the spot.
Ingredients:
50ml gin (I use Hendricks)
15ml honey syrup*
15ml fresh lemon juice
Champagne
Method:
First, combine all ingredients, except the champagne, in a cocktail shaker with ice and shake hard for about 30 seconds. Double strain into either a champagne flute of a coupe glass until the glass is 3/4 full and then top with champagne. Garnish with either a fresh lemon twist or a small piece of fresh honeycomb on the rim of the glass.
Viola! The Dogs Bollocks.
* I usually make my own honey syrup by making a classic sugar syrup and incorporating honey into it before it cools. This can be stored in the fridge for a couple of weeks.
